Unicorn Food Trend Featured On Menu of Santa Monica's Chomp Eatery 

Rainbow grilled cheese sandwiches and sweet potato waffle fries

A magical new food trend has taken over menus across the country and has become nearly ubiquitous on foodies' social media feeds.

That trend – unicorn or rainbow food – started last year and hasn't lost its sizzle yet. Even Starbucks – albeit for a short period of time – recently sold "unicorn Frappuccinos," which were made with mango syrup and layered with a "pleasantly sour blue drizzle." 

The trend was unintentionally started by Adeline Waugh, a Miami food stylist, content creator, and blogger, who added beetroot food dye to cream cheese in an attempt to jazz up her Instagram pictures. Since then, restaurants and cafes around the country have popped out various rainbow-colored items, including bagels, lattes, ice creams, and cakes. 

Santa Monica-based Chomp Eatery & Juice Station is capitalizing on this trend by offering rainbow grilled cheese on its menu. For its grilled cheese, Chomp uses fresh bread that's delivery daily and blends four types of cheeses for a perfect melt. The restaurant's founder, Rolan Pongpuntara, said she came up with the concept last year and it's been a hit ever since. 

Pongpuntara spent weeks crafting and perfecting her grilled cheese recipe, and the hard work has paid off. Many of Chomp's patrons come in solely for a chance to take a picture or video of the vibrant sandwich, pulling apart two halves to reveal a multicolored melt. And Pongpuntara will warn her customers: take the picture while the sandwich is hot and the cheese is still melted. 

Chomp has stayed ahead of its competitors by establishing other trends as well. The restaurant is famous for its freshly made lemonade served in glass containers shaped like light bulbs. Pongpuntara also prides herself on offering a full juice bar, as well as house-made orange juice, homemade dressings, and sauces. Chomp's sweet potato waffle fries – a customer favorite – are topped with handmade melted marshmallows. 

Chomp offers an extensive menu, providing options for the health-conscious as well as the indulgent. For this successful Santa Monica eatery, currently in its third year of operation, it appears that a rainbow has indeed led to a pot of gold.
